Whey protein hydrolysate is whey that has already been cut into short peptide chains by enzymes rather than left to the gut to do it. The result is a powder with a high proportion of di- and tripeptides and a noticeably bitter taste — the bitterness is the hydrolysis, and any product that tastes sweet has had that covered up.
